Can I jack up my Chrysler from the rear differential or should I jack up one side of the axle at a time?

I jack up my Subaru from the rear diff all the time...

I jack my ford from the pumpkin up all the time, then pop some stands on either the ends of the axles or the frame, depending on the required height.

So long as that won't be the only thing supporting it when you get underneath then should be fine.
Oh, and so long as it's on level ground. Could tip if it's on a slant.

Go for the diff, and make sure a front wheel is chocked, preferably both.

Jack it up by the rear diff housing, then put jackstands under each side axle tube. Best way to support the car, unless of course you're replacing springs and shocks.

True but this is a solid axle and not bolted to the frame like a scoobadu

Recently I saw a guy working under a car supported (if that's the right word) by a jack. After debating with myself as to whether I should tell him how stupid he was I decided to let him at it.

Yeah, I stopped doing that the moment I had my E36 twist its stock jack and drop to the ground. Luckily I was out from under the wheel-well, but if it had happened 5 mins earlier I'd have been wedged under there.
